I call this one Southern Vegan Soup with Sausage…..Sausage, Collard greens, and black eyed peas.
Just like most southerns; those who were born in the South, moved there, or passing through the South there’s nothing more comforting than southern cuisine.
As I age, I want to maintain my overall health so I started taking foods that were filling/fulfilling to the body and made meals that are much enjoyable.

Here is the recipe to make your own Southern Vegan Soup with Sausage. The base is made with vegetable stock, onions (Vidalia will do), onion powder, and garlic powder.
Sausage is Field Roast Maple breakfast sausage. ( crumble them in a skillet or cook in halfs in air fryer so the sausage doesn’t soak up the juices as much). You get a little crispiness with the sausage.
Good meal for rainy weather.
